The Lord's Prayer asks for our daily bread, representing our basic needs, including spirtual needs. The concept of bread and grain is central to the Bible, symbolizing life, provision and faith.


This cornbread recipe actually contains NO cornmeal, but almond meal. The additiion of cheese and cream cheese makes it creamy, and the addition of pickled jalapenos gives it a little kick. Golden and crusty on the outside and moist on the inside-only 2.4 grams net carbs per servind (8 servings total).


INGREDIENTS

2 T salted butter, cold

1/4 c salted butter, melted

2 oz softened cream cheese

2 T sweetener

3 large eggs, room temp

1/4 c chopped pickled jalapeno peppers

1/2 c shredded cheddar cheese

1 1/2 c almond flour

1/4 t salt

1 t baking powder

12-14 slices pickled jalapeno peppers


INSTRUCTIONS

Preheat oven to 375 degrees.


Spray either a 9-inch cast iron skillet, a 9-inch round cake pan, a 9-inch square cake pan or 2 6-inch cast iron pans with nonstick spray. Place cold butter into pan(s) and place in the hot oven to melt butter. Remove from oven while preparing batter.


In a large bowl, whisk together the melted butter, cream cheese, sweetener, eggs and cheese. Add the chopped peppers and stir.


In a small bowl, whick together the almond flour, salt and baking powder. Add to the wet mixture in large bowl and mix to combine. Pour into pan(s). Top with sliced peppers.


Bake 25-30 minutes until lightly browned on top.


Serves 8
